Pulled oyster mushroom in soy sauce

Ingredients

  • 300 g oyster mushrooms (or Koningsboletet or Portobello)
  • 2 tablespoons of olive oil
  • 75 ml soy sauce manis
  • 3 tablespoons of soy sauce
  • 1½ tablespoon of srirachas sauce
  • 2 teaspoons Mirin
  • 1 teaspoon of lime juice
  • 1 teaspoon of brown sugar
  • 1 teaspoon of cornflour + 2 tsp water
  • 1 teaspoon of sesame seeds, roasted, for garnish
  • steamed sandwiches or white rice and cucumber salad, to serve with it

Prepare

Preheat the oven to 180 ° C. Cover a baking sheet with baking paper. Pull the oyster mushroom apart in thick strings. Divide over the baking sheet with the oil and ½ teaspoon of salt. Bake for 20 minutes.

For the sauce, heat the soy sauce, soy sauce, srirachas, mirin, lime juice and brown sugar in a wok. Make a porridge from the cornflour and the water. Add and let it simmer until the sugar is dissolved and the sauce binds.

Add the roasted oyster mushroom to the sauce. Garnish with sesame seeds. Nice on a steamed sandwich, or with white rice with a cucumber salad on the side.
