Vegetarian lemper

Ingredients

  • 500 grams of ketan rice (glutinous rice)
  • 600 ml of coconut milk
  • 4 Lime leaf leaves
  • 1 stem lemon grass (bruised)
  • 1/2 tsp of salt
  • Boomboe:
  • 1 spring onion
  • 2 garlic cloves
  • 1 stem lemon grass
  • 2 lime leaves
  • 1 chili pepper (remove the seeds for less spicy)
  • 2 tbsp peanut oil
  • Other ingredients:
  • 150 grams of oyster mushrooms (finely chopped)
  • 200 grams of vega (n) minced meat
  • 1/2 TL turmeric
  • 1/2 TL cumin powder
  • 1/2 tsp coriander powder
  • 1 TL Tamarindepasta
  • 1 tbsp coconut blossom sugar
  • 100 ml of coconut milk (possibly more)
  • salt or soy sauce as required

    Method of preparation

    1. Boil the rice in the coconut milk, together with salt, lemongrass and lime leaf. If you cook this in a pan, stir well. Boil until the rice is well cooked and the coconut milk has evaporated. This takes about 30 minutes. Is it going too fast? Then add some extra water.
    2. Remove the lime leaves from the rice and let the rice cool slightly to lukewarm. Then you can easily spread it over the foil.
    3. Meanwhile, make the boomboe. First prepare lemongrass by cutting the bottom and the outer leaf, then cut into small pieces. Now mix all the ingredients for the boomboe in a chopper or with a hand blender.
    4. Place the frying pan over medium heat, pour some extra oil in the pan and fry the boomboe for a few minutes. Add the finely chopped oyster mushrooms and minced meat and fry briefly. Then add the spices, tamarind, sugar and coconut milk. Let the whole blow through for about 10 minutes and then remove from the heat. Allow the mixture to cool before you continue.
    5. Tear off a piece of foil for each of the Lemper. Divide the rice into 12 portions.
    6. Coat the rice of 1 portion over the foil and press the rice flat so that you get a rectangle. Now put a dash of filling and roll up the roll. Just practice and then it goes from a slate roof! Close the ends of the plastic wrap well and let the row rolls set in the fridge. Repeat until you have 20 rolls.
    7. The tastiest are the lemper if you remove them from the foil before serving and warms up in the microwave (or steamer).
